About the Recipe

Ingredients
2 cod fillets
1/2 cup all-purpose flour
Salt and pepper to taste
Oil for frying (vegetable or rapeseed oil)
Lemon wedges for serving
Preparation
Prepare the Cod:
Pat the cod fillets dry with paper towels.
Season both sides of the fillets with salt and pepper.
Dredge in Flour:
Place the flour in a shallow dish. Coat each cod fillet in flour, pressing gently to ensure an even layer.
Heat the Oil:
In a skillet, heat about 1/4 inch of oil over medium-high heat until hot.
Fry the Cod:
Carefully add the coated cod fillets to the hot oil. Fry for about 3-4 minutes on each side, until golden brown and cooked through.
Drain:
Remove the fillets from the skillet and place them on paper towels to drain excess oil.
Serve:
Serve immediately with lemon wedges for squeezing on top.
Jim suggests: Serve with Tartar Sauce and a mixed green salad
